Born on Lamar, Built for the Neighborhood
Raw Republic started with a simple frustration: why was it so hard to find genuinely good bread and honest groceries in Austin? We wanted a place where a loaf of sourdough tasted like bread should — crusty, tangy, alive — and where a jar of honey came from a farm you could visit.
So we opened our doors on North Lamar with two ovens, a hand-picked selection of local products, and a commitment to doing things the slow way. Three years later, we're still baking before dawn, still talking to our suppliers by name, and still surprised when regulars tell us our bread made their Sunday morning better.
Good food doesn't need a fancy label. It just needs to be made well, sourced honestly, and shared with people who care.
